Chicken Pesto Salad In A Jar🍗🥗
💪Over 50g of protein per serving!
Ingredients: .
1½ pounds skinless boneless chicken breasts
1 tbsp olive oil 
2 cups dry whole wheat fusilli pasta
¼ cup prepared pesto 
¾ cup low-fat Greek yogurt 
½ cup sliced black olives 
8 oz cherry tomatoes, halved 
1 roasted red pepper, chopped 
4 oz baby mozzarella, halved 
2 oz arugula 
2 scallions, sliced salt, black pepper to taste.
1️⃣ Preheat oven to 450°F. 
2️⃣ Place the chicken in a baking dish, season with ½ tsp of salt and ¼ tsp of black pepper or to taste and drizzle with olive oil and toss to coat. 
3️⃣ Bake in a preheated oven for 18-20 minutes. 
4️⃣ Remove from the oven, allow to cool slightly then chop into bite size pieces. Set aside. 
5️⃣ Bring a large pot of salted water to a boil over high heat and add the pasta and cook, until the pasta is al dente, 9-11 minutes.

6️⃣ Drain and rinse with cold water and set aside to drain thoroughly. 
7️⃣ To make the dressing, in a small bowl combine the pesto and Greek yogurt. Season with salt and black pepper to taste. 

8️⃣ Divide the dressing between 4 jars and top with cooked pasta, cherry tomatoes, chicken, arugula, mozzarella, olives, roasted pepper, and scallions. -
