Ingredients

    -Romaine lettuce (about 3/4 cup, more or less if you like)
    -1/4 cup peeled, seeded, and chopped cucumber
    -1/4 cup canned corn kernels, drained and rinsed
    -1/4 cup canned black beans, drained and rinsed
    -1/4 cup pico de gallo
    -3 oz grilled or roasted chicken breast, no skin
    -2 Tbs guacamole
    -1 Tbs light sour cream
    -2 tsp sweet chili sauce
    -1 Tbs lime juice


Directions

Arrange the lettuce in the bottom of a big bowl. On top of it, layer the cucumber, pico de gallo, beans, corn, and chicken. Add guacamole and sour cream. For dressing, combine the sweet chili sauce, lime juice, and a tablespoon of waterMakes 1 3-block serving;
