Tuesday – PR’s baby

We are only 3 days into the Whole Life Challenge and already, we are seeing lots of PR’s set. Is it because we are dialed into our nutrition, and pushing the extra bit harder because we are competing in a challenge? Whatever the reason, we are really excited about what we have seen so far. We have 63 athletes competing in the challenges, and look forward to seeing many transformations, both mentally and physically.

How many of you are blown away by all the artificial additives in the food we eat? Even though many foods are “organic” they are still filled with sugar and other preservatives, just to prolong the shelf life. One of our members told me today that she spent 3 hours in the grocery store trying to find things that her and her family could eat for the challenge. Isn’t that sad? Another, said that she was blown away by all the junk that was in the scrambled eggs on the breakfast buffet at the hotel she stayed at over the weekend. After realizing that most of the breakfast bar was off limits, she resorted to eating food she had prepared for her trip.

Does anyone else have any stories they would like to share?

    Thank goodness for the farmer’s market and Olive Oil. I lose a point every day b/c I’m still doing almond milk in my coffee. Any suggestions? Norah made her own coconut milk. I might try that. If you haven’t watched FOOD INC (a documentary you can get on netflix) and are interested in the issues/business of additives and chemicals in your food, it is awesome. One thing I really took away from it was that spending majority of our time and money on food is a good thing. We should be spending our most precious resources (time and money) on feeding the bodies of ourselves and our families.

    Sarah,

    Here is a recipe for Coconut Milk (Paleo Friendly. Hope this helps.

    Ingredients:
    1 can of Coconut Milk, 13.5oz
    2 tablespoon of Coconut Oil (melted)
    1 egg (preferably organic)
    1 teaspoon of Vanilla Extract
    Either 1 teaspoon (or more) liquid Stevia or 1 tablespoon honey

    Optional ingredients (to create a flavored creamer):
    Cinnamon
    Almond extract (or other flavored extracts)
    Cacao Powder
    Pumpkin Pie Spice with a little canned pumpkin

    Directions:
    Put all ingredients in a blender or Vitamix and blend until you have a nice cream consistency. You can then store in the fridge. The creamer will also thicken up.

    Here is another one, so now you have options :) .

    Coconut Milk Coffee Creamer (makes 6-8 servings)
    1 Can Full-Fat Coconut Milk
    3-4 Medjol Dates (pit removed)
    1 Vanilla Bean*, scraped (you’re using the seeds from inside the pod)

    *Use 1T. Vanilla Extract (free of sugar, glycerin, or other junk), if you’re using alcohol

    Optional Add-Ins:
    -Cinnamon
    -Pumkin Pie Spice
    -Orange Zest
    -Unsweetened Cocoa Powder

    Add the dates, vanilla bean seeds/scrapings plus 1T. hot water to a blender and puree until smooth(ish).

    Add 1/4 of the can of coconut milk and blend until smooth (it’s near impossible to create a completely smooth puree, so just be ok with the speckles of date).

    Add the remaining 3/4 can of coconut milk and blend.
    Transfer mixture to a container and transfer to the fridge until ready to use.

    Once refrigerated, the mixture will set to a whip cream-like consistency. Use as creamer or a topping for sliced berries.

    I’ve seen posts on the WLC site about how easy it is to make Almond milk. Maybe that’s something to check out

    Mike told me Walmart sold it without guar gum, so I went there last night and bought 10 cans. It is in the Asian food aisle. Although I bought every can at the Southpoint Walmart. Ferry Farm probably has it too. I am willing to share my stash though.
